  • 2 pounds small yellow or red potatoes, scrubbed and cut into 1-inch pieces
  • 1/3 cup duck fat Can substitute with olive oil or other high-smoke point oil
  • 3 cloves garlic, minced
  • 1 tablespoon fresh thyme leaves, stripped from stems
  • 1 1/2 teaspoons flaky sea salt, plus more to taste
  • 1 teaspoon freshly cracked black pepper
  • 2 tablespoons fresh chervil, finely chopped (plus a little extra for serving, optional)

Method
 

Preparation
  1. Preheat your oven to 425°F (220°C) and place a metal roasting pan in the oven.
  2. Scrub and cut the potatoes into 1-inch pieces, then pat them dry.
  3. In a small saucepan, warm the duck fat until melted. Stir in the minced garlic, thyme, sea salt, black pepper, and chervil.
Roasting
  1. Once the roasting pan is hot, add the potatoes to the pan. Pour the duck fat mixture over them and toss to coat well.
  2. Roast the potatoes for 20 minutes, then stir them. Continue roasting for another 15-20 minutes, or until they are golden and tender.
  3. Adjust the seasoning to taste and serve hot, optionally garnished with extra chervil.

Notes

Make sure to dry the potatoes thoroughly after washing for extra crispiness when roasted. You can experiment with herbs like rosemary or oregano.
