Ingredients
  

For the Bars
  • 2 3/4 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon fine salt
  • 2 teaspoons ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground cardamom
  • 1/2 cup honey sweetener for the bars
  • 1/3 cup unsulphured molasses
  • 3/4 cup packed dark brown sugar
  • 1/4 cup unsalted butter, melted and slightly cooled let it cool before mixing
  • 1 large egg, room temperature
  • 1 teaspoon vanilla extract
  • 1/2 cup toasted chopped almonds toast for added flavor
For the Lemon Glaze
  • 1 1/4 cups powdered sugar
  • 2 1/2 to 3 tablespoons fresh lemon juice adjust for consistency
  • 1 teaspoon finely grated lemon zest

Method
 

Preparation
  1. Preheat the oven to 350 degrees F (175 degrees C). Line a 9×13-inch baking pan with parchment paper, allowing the paper to hang over the sides for easy removal.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, ginger, and cardamom.
  3. In a large mixing bowl, whisk the honey, molasses, brown sugar, melted butter, egg, and vanilla until smooth and combined.
  4. Gradually mix the dry ingredients into the wet mixture until a thick batter forms.
  5. Fold in the toasted chopped almonds until evenly distributed.
  6. Spread the batter evenly into the prepared pan using an offset spatula or the back of a spoon.
Baking
  1. Bake for 22 to 26 minutes, or until the top is lightly golden and a toothpick inserted near the center comes out with a few moist crumbs.
  2. Let the bars cool completely in the pan before glazing.
Glazing
  1. For the glaze, whisk together the powdered sugar, lemon juice, and lemon zest until smooth. Adjust with more lemon juice if needed for a spreadable consistency.
  2. Spread the glaze evenly over the cooled bars. Allow it to set for about 20 minutes before slicing into 16 squares.

Notes

Serve German Honey Bars at room temperature. They pair well with coffee or tea and can be enjoyed on their own or with a scoop of ice cream. Store in an airtight container at room temperature for up to 5 days or freeze for up to 3 months.
