Ingredients

For the Chewies
  • 1 cup Unsalted butter Melted
  • 8 oz Semisweet chocolate Melted with the butter
  • 1 cup Granulated sugar
  • 1/2 cup Brown sugar Packed
  • 2 Eggs Large
  • 1 tsp Vanilla extract
  • 1 cup All-purpose flour
  • 1/4 cup Cocoa powder
  • 1/2 tsp Salt
  • 1 cup Sweetened shredded coconut
  • 1/2 cup Chopped pecans

Method

Preparation
  1. Preheat the oven to 350 degrees F. Grease a 9x13-inch baking pan and line it with parchment paper, leaving some overhang for easy removal.
  2. Melt the butter and semisweet chocolate together over low heat or in the microwave. Stir until smooth and let it cool for a few minutes.
  3. Whisk the granulated sugar and brown sugar into the chocolate mixture.
  4. Add the eggs one at a time, along with the vanilla, mixing until smooth and glossy.
  5. In a separate bowl, whisk together the flour, cocoa powder, and salt.
  6. Add the dry ingredients to the chocolate mixture and fold gently until no dry streaks remain.
  7. Fold in the sweetened shredded coconut and chopped pecans. The batter will be thick, so mix well to combine.
  8. Spread the batter in the prepared pan, smoothing the surface.
Baking
  1. Bake for about 25-30 minutes, until the edges are set and a toothpick inserted near the center comes out with a few moist crumbs.
  2. Let the pan cool completely before lifting out the chewies and cutting them into squares.

Notes

Make sure to use high-quality semisweet chocolate for the richest flavor. Do not overbake. The chewies should be set at the edges but still soft in the center when taken out of the oven. Let the bars cool completely in the pan before cutting to prevent them from falling apart.
