Garlic Parmesan Pork Meatloaf

Ingredients
  

  • 2 lbs ground pork
  • 1 cup Panko breadcrumbs
  • 3/4 cup freshly grated Parmesan cheese
  • 4 cloves garlic , minced
  • 2 large eggs , lightly beaten
  • 1/4 cup whole milk
  • 1/4 cup fresh Italian parsley, finely chopped
  • 1 tsp kosher salt
  • 1/2 tsp freshly cracked black pepper
  • 1 tsp dried oregano
  • 1 tbsp Worcestershire sauce

Method
 

  1. Preheat the oven to 375°F (190°C) and lightly grease a 9x5 inch loaf pan or line a rimmed baking sheet with parchment paper.
  2. In a small bowl, whisk together the eggs, milk, and Worcestershire sauce until emulsified.
  3. In a large mixing bowl, combine the ground pork, breadcrumbs, grated Parmesan cheese, minced garlic, parsley, salt, pepper, and oregano.
  4. Pour the liquid egg mixture over the dry ingredients and mix by hand until just combined, ensuring the fat and lean protein are evenly distributed without overworking.
  5. Transfer the mixture to the prepared pan or shape into a uniform rectangular loaf on the baking sheet.
  6. Bake for 55 to 60 minutes, or until a meat thermometer inserted into the center reaches an internal temperature of 160°F (71°C).
  7. Remove from the oven and allow the meatloaf to rest for 10 minutes to allow the juices to redistribute before slicing.
