Season the Chicken: In a medium bowl, toss the chicken pieces with salt, pepper, smoked paprika, onion powder, and dried oregano until completely and evenly coated.
High-Heat Sear: Heat the olive oil in a large skillet (cast-iron is best!) over medium-high heat.
Brown the Bites: Add the chicken in a single layer. Let it cook undisturbed for 2–3 minutes to get a good sear, then stir and cook for another 3–4 minutes until golden-brown and cooked through.
Lower the Heat: Turn the heat down to low. This is the secret to keeping the garlic sweet and preventing the butter from burning.
The Garlic Butter Finish: Add the butter and minced garlic to the pan. As the butter melts, toss the chicken continuously to coat every piece in the aromatic, golden sauce.
Baste: Let the chicken simmer in the garlic butter for just 1 minute until the sauce becomes slightly thick and glistening.
Serve: Remove from heat, shower with freshly chopped parsley, and add a quick squeeze of lemon juice. Serve immediately, straight from the skillet, while the butter is still bubbling!
