Fruit Salad with Healthy Honey Yogurt Sauce

Ingredients
  

  • 1 cup fresh strawberries, hulled and sliced
  • 1 cup fresh blueberries
  • 1 cup fresh pineapple, cubed into 1-inch pieces
  • 1 cup red seedless grapes, halved
  • 2 kiwis , peeled and sliced into half-moons
  • 1 cup plain low-fat Greek yogurt
  • 2 tablespoons hone y
  • 1/2 teaspoon pure vanilla extract
  • 1 teaspoon fresh lemon juice
  • 1 tablespoon fresh mint leaves, finely chopped

Method
 

  1. Thoroughly wash and dry all fresh produce.
  2. Prepare the fruit by slicing the strawberries and kiwis, cubing the pineapple, and halving the grapes as specified.
  3. In a medium mixing bowl, combine the Greek yogurt, honey, vanilla extract, and lemon juice. Whisk until the texture is smooth and the honey is fully incorporated.
  4. Place all prepared fruit into a large, chilled mixing bowl.
  5. Pour the yogurt mixture over the fruit and use a rubber spatula to gently fold the ingredients together until the fruit is evenly coated.
  6. Garnish with chopped fresh mint leaves.
  7. Serve immediately or refrigerate for up to 30 minutes to allow flavors to meld.
