Crust Ingredients
  • 24 cookies chocolate sandwich cookies or chocolate wafer cookies
  • 5 tablespoons melted butter
Filling Ingredients
  • 6 ounces semisweet chocolate
  • 1 cup softened unsalted butter
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 3 large pasteurized eggs Ensure eggs are pasteurized for safety.
  • 1 cup cold heavy cream For folding into the chocolate mixture.
Topping Ingredients
  • 1½ cups heavy cream For topping.
  • 2 tablespoons powdered sugar
  • 1 teaspoon vanilla extract For topping.
  • to taste Chocolate shavings or curls For garnish.

Method
 

Preparing the Crust
  1. Preheat the oven to 350°F (175°C).
  2. Crush the chocolate cookies and mix them with melted butter.
  3. Press this mixture into a 9x13-inch baking pan.
  4. Bake for 8-10 minutes and let it cool.
Making the Filling
  1. Melt the semisweet chocolate over simmering water or in the microwave and let it cool.
  2. In a bowl, beat the softened butter and sugar together until pale and fluffy.
  3. Add vanilla extract and beat in the pasteurized eggs one at a time, mixing well after each.
  4. Mix in the cooled melted chocolate until well combined.
  5. Whip the cold heavy cream to medium-stiff peaks and then fold it into the chocolate mixture.
  6. Spread the filling over the cooled crust and refrigerate for at least 6 hours or overnight.
Topping the Pie
  1. For the topping, whip another 1½ cups of heavy cream with powdered sugar and vanilla until soft peaks form.
  2. Spread this over the pie and finish with chocolate shavings before serving.

Notes

Serve chilled and cut into squares for easy serving. Pairs well with coffee or milk. Store leftovers covered in the refrigerator for up to 3 days.
