French Onion Meatloaf with Gruyère Cheese

Ingredients
  

  • 2 lbs ground beef (90% lean)
  • 2 large yellow onions, thinly sliced
  • 2 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 1/2 cup beef broth
  • 1 cup Panko breadcrumbs
  • 1/2 cup whole milk
  • 2 large eggs , lightly beaten
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1.5 cups Gruy ère cheese, shredded and divided
  • 1 teaspoon kosher salt
  • 1/2 teaspoon cracked black pepper

Method
 

  1. Preheat oven to 375°F (190°C) and line a rimmed baking sheet with parchment paper.
  2. Heat butter and olive oil in a large skillet over medium heat. Add onions and cook, stirring frequently, for 20-25 minutes until deeply caramelized. Add 2 tablespoons of beef broth to deglaze the pan, scraping up browned bits, then remove from heat to cool slightly.
  3. In a small bowl, combine Panko breadcrumbs and milk. Allow to soak for 5 minutes until a paste forms.
  4. In a large mixing bowl, combine the ground beef, breadcrumb mixture, eggs, Worcestershire sauce, thyme, salt, pepper, half of the caramelized onions, and 1/2 cup of the shredded Gruyère.
  5. Gently mix the ingredients by hand until just combined; do not overwork the meat.
  6. Form the mixture into a 9x5-inch loaf shape on the prepared baking sheet.
  7. Bake for 45 minutes.
  8. Remove from oven and spread the remaining caramelized onions over the top of the loaf, followed by the remaining 1 cup of Gruyère cheese.
  9. Return to the oven and bake for an additional 10-15 minutes until the cheese is bubbly and the internal temperature reaches 160°F (71°C).
  10. Let the meatloaf rest for 10 minutes before slicing to ensure the juices redistribute.
