Ingredients
  

  • 2 cups cherry tomatoes, halved
  • 2 large ripe avocados, diced
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup fresh cilantro, chopped
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon fresh lime juice
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon ground black pepper

Method
 

  1. Whisk together the olive oil, lime juice, salt, and pepper in a small bowl until emulsified.
  2. Place the halved tomatoes, diced avocados, and sliced red onion in a large mixing bowl.
  3. Drizzle the prepared dressing over the salad ingredients.
  4. Add the chopped cilantro to the bowl.
  5. Gently toss all ingredients together with a large spoon, taking care not to crush the avocado pieces.
  6. Serve immediately for optimal freshness.
