Ingredients

  • 1 pound carrots peeled, whole, or halved
  • 4 tablespoons butter
  • 3 cloves garlic minced
  • 2 tablespoons honey
  • Salt to taste
  • Black pepper
  • Fresh parsley chopped
  • Optional: tiny pinch of red pepper flakes

Method

  1. Roast the carrots
  2. Preheat your oven to 425°F.
  3. Place the carrots on a baking sheet. Drizzle lightly with oil and season with salt and pepper. Roast for about 25–30 minutes until tender with browned edges.
  4. (And yes, your kitchen will smell incredible.)
  5. Make the brown butter sauce
  6. In a skillet, melt the butter over medium heat. Keep stirring while it foams and turns golden brown. You’ll notice a warm, nutty smell—that’s the good stuff.
  7. Add the garlic and cook for about 30 seconds.
  8. Stir in the honey.
  9. Coat the carrots
  10. Toss the roasted carrots into the skillet or pour the sauce right over them. Sprinkle parsley on top.
  11. If you like a little heat, add a pinch of red pepper flakes. It’s sooo good with the sweetness.
