Ingredients

Main Ingredients
  • 1 lb smoked sausage or kielbasa, sliced into rounds
  • 2 lb potatoes, cut into bite-sized cubes
  • 1 medium onion, sliced or diced
  • 2 cloves garlic, minced
  • 1 tbsp olive oil or melted butter
  • 1 tsp paprika
  • 1 tsp dried Italian herbs or thyme or oregano mix
  • 1/2 tsp salt (adjust to taste)
  • 1/4 tsp black pepper
  • 1/4 cup chicken broth (or water)
  • 1 cup carrots, sliced (optional)
  • 1/4 tsp chili flakes (optional)
  • 2 tbsp grated parmesan for serving (optional)

Method

Preparation
  1. Prepare the ingredients by slicing the sausage and cutting the potatoes, onion, and garlic.
Cooking
  1. Place potatoes, sausage, onion, and garlic in the slow cooker.
  2. Drizzle with olive oil or butter, sprinkle paprika, herbs, salt, and pepper.
  3. Pour in chicken broth and gently stir everything to distribute the seasoning evenly.
  4. Cover and cook on LOW for 6 to 7 hours, or HIGH for 3 to 4 hours until potatoes are tender and sausage is heated.
  5. Taste and adjust salt or pepper if needed. Sprinkle with parmesan or fresh herbs before serving.

Notes

Cut the potatoes into even sizes to ensure they cook evenly. For added flavor, consider using a smoked sausage with a spicy kick. Feel free to add other vegetables like bell peppers or carrots to enhance the dish.
