  • 400 g fresh green beans, trimmed or frozen Frozen green beans can be used; adjust cooking time if necessary.
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 cup chicken broth Vegetable broth can be used for a vegetarian option.
  • 2 tbsp butter cut into small pieces Can be adjusted based on dietary preferences.
  • 1 tsp salt Adjust depending on the saltiness of the ham.
  • 0.5 tsp black pepper
  • 1 tsp dried thyme or Italian seasoning
  • 0.5 tsp paprika (optional, adds warmth)
  • 0.5 tsp chili flakes (optional for slight heat)
  • 1 tbsp olive oil (optional for extra richness)

Method
 

Preparation
  1. Wash potatoes and cut into medium chunks if large.
  2. Trim green beans.
  3. Dice onion and mince garlic.
  4. Cut ham into cubes.
Layering in the Crockpot
  1. Add potatoes first to the bottom of the slow cooker.
  2. Place green beans on top.
  3. Add ham evenly over the vegetables.
  4. Sprinkle onion and garlic across the mixture.
Cooking
  1. Pour chicken broth over everything.
  2. Add butter pieces on top.
  3. Season with salt, pepper, thyme, and paprika.
  4. Cover and cook on LOW for 6 to 7 hours, or HIGH for 3 to 4 hours, until potatoes are fork tender.
Serving
  1. Gently stir before serving to combine flavors.
  2. Taste and adjust salt or pepper if needed.

Notes

This dish can be served warm on its own or with a slice of crusty bread. It pairs well with a simple salad or cornbread. To store leftovers, cool to room temperature and place in an airtight container for up to 3 days, or freeze for 2-3 months.
