  • 2 pieces boneless, skinless chicken breasts
  • 4 cups chicken broth
  • 1 can cream of chicken soup
  • 1 piece onion, chopped
  • 2 pieces carrots, sliced
  • 2 stalks celery, chopped
  • 3 cloves garlic, minced
  • 1 can refrigerated biscuit dough
  • 2 tablespoons butter, melted
  • Salt, to taste
  • Pepper, to taste
  • Fresh parsley (optional), for garnish

Method
 

Preparation
  1. Lightly grease the inside of your slow cooker to prevent sticking. Add the chicken breasts to the bottom of the crockpot in a single layer.
  2. Scatter the chopped onion, carrots, celery, and minced garlic over the chicken.
  3. In a separate bowl, whisk together chicken broth, cream of chicken soup, melted butter, salt, and pepper until smooth. Pour this mixture over the chicken and vegetables.
Cooking
  1. Cover and cook on low for 6–7 hours or high for 3–4 hours.
  2. About 30 minutes before serving, remove the chicken breasts, shred them, and return them to the crockpot.
  3. Cut each biscuit into small pieces and drop them on top of the hot mixture.
  4. Cover and cook on high for 30–40 minutes without lifting the lid.
  5. Once cooked, gently stir, taste the broth, and adjust the seasoning. Sprinkle with parsley and serve hot.

Notes

For a quicker option, use frozen vegetables. For a thicker consistency, add cornstarch mixed with water towards the end. Adjust seasonings to your taste.
