  • 2.5 to 3 pounds boneless sirloin tip roast
  • 4 cups low-sodium beef broth Adjust according to your taste.
  • 1 large yellow onion, sliced
  • 4 cloves fresh garlic, minced
  • 1 tablespoon Worcestershire sauce Can substitute with soy sauce.
  • 1 teaspoon dried thyme Use fresh herbs for better flavor if available.
  • 1 teaspoon dried rosemary Use fresh herbs for better flavor if available.
  • 1 teaspoon salt Adjust to taste.
  • 1 teaspoon black pepper Adjust to taste.
  • 2 tablespoons cornstarch (optional) For thickening gravy.

Method
 

Preparation
  1. Pat the roast dry and season it with salt, black pepper, thyme, and rosemary.
  2. Heat oil in a skillet and brown the roast for 2–3 minutes on each side.
  3. Place sliced onion and garlic in the slow cooker, then set the browned roast on top.
Cooking
  1. Pour in the beef broth and Worcestershire sauce.
  2. Cover and cook on LOW for 6–8 hours. Check for tenderness after 6 hours; use a thermometer for accurate doneness.
  3. Let the roast rest. If desired, make gravy by whisking cornstarch with cold water into the cooking liquid over heat.
  4. Serve sliced beef with warm gravy.
