  • 12 small wooden sticks or sturdy skewers Soak in water for 15 minutes before use.

Preparation
  1. Preheat the oven to 425°F (220°C) and line a large baking sheet with parchment paper.
  2. Boil the potato chunks in salted water until very tender, about 15 to 18 minutes. Drain well and mash until smooth.
  3. Mix the cornstarch and salt into the mashed potatoes until a soft dough forms. If the mixture feels sticky, let it sit for a few minutes.
  4. Scoop out small portions of the dough and roll them into 1 1/2-inch wide balls. Insert a wooden stick into each ball and place them on the prepared baking sheet.
  5. Lightly flatten each ball to ensure even baking and crisp edges.
Baking
  1. Bake for 20 minutes, carefully turn each lollipop over, and bake for another 15 to 20 minutes until golden and crispy.
  2. Sprinkle with a little extra flaky salt if desired, and serve warm.

Notes

To enhance flavor, consider adding spices such as garlic powder, onion powder, or paprika before shaping the lollipops. You can refrigerate prepared potato balls and bake them fresh when ready to serve. For added crispiness, spray lightly with cooking spray before baking.
