  • 3 large russet potatoes, peeled
  • 6 tablespoons unsalted butter, melted
  • 1 teaspoon salt

Preparation
  1. Preheat the oven to 375 degrees F.
  2. Generously brush a standard 12-cup muffin tin with some of the melted butter.
  3. Slice the potatoes very thin, about 1/8 inch thick, so they will bend easily and crisp up nicely.
  4. Toss the potato slices in a bowl with the remaining melted butter and salt until they are all evenly coated.
  5. Line each muffin cup with overlapping potato slices, pressing them against the bottom and up the sides to form little cups.
Baking
  1. Bake for 30 to 35 minutes, or until the edges are deeply golden and crisp, while the centers remain tender.
  2. Let the potato cups rest in the pan for 5 minutes, then carefully lift them out and serve warm.

Notes

These potato cups are best enjoyed warm and can be served on their own or with a dollop of sour cream on top. You can also pair them with dips and sauces to add extra flavor. Tips include using a mandoline slicer for even potato slices and experimenting with seasonings like garlic powder or paprika.
