Crispy Cheesy Beef Tacos with Creamy Lime Sauce

Ingredients
  

  • 1 pound ground beef (80/20)
  • 1 tablespoon taco seasoning
  • 1/4 cup wate r
  • 8 small corn tortillas
  • 2 cups shredded Mexican cheese blend
  • 2 tablespoons vegetable oil
  • 1/2 cup sour cream
  • 1 tablespoon fresh lime juice
  • 1/2 teaspoon lime zest
  • 1/4 teaspoon fine sea salt
  • 1 cup shredded iceberg lettuce
  • 1/2 cup diced roma tomatoes

Method
 

  1. Place ground beef in a large skillet over medium-high heat and cook until browned, approximately 7-9 minutes.
  2. Drain rendered fat from the skillet and return to heat.
  3. Add taco seasoning and water to the beef; simmer for 5 minutes until the liquid has reduced and coated the meat.
  4. In a separate small mixing bowl, whisk together sour cream, lime juice, lime zest, and salt until smooth.
  5. Heat vegetable oil in a flat griddle or large skillet over medium heat.
  6. Place a corn tortilla in the skillet and immediately layer 1/4 cup of cheese and 2 tablespoons of beef onto one half.
  7. Fold the tortilla over the filling and press down with a spatula.
  8. Fry for 2 minutes per side until the shell is golden brown and crispy.
  9. Repeat process for remaining tortillas.
  10. Garnish with lettuce and tomatoes, then drizzle with the creamy lime sauce before serving.
