Heat vegetable oil in a flat griddle or large skillet over medium heat.
Place a corn tortilla in the skillet and immediately layer 1/4 cup of cheese and 2 tablespoons of beef onto one half.
Fold the tortilla over the filling and press down with a spatula.
Fry for 2 minutes per side until the shell is golden brown and crispy.
Repeat process for remaining tortillas.
Garnish with lettuce and tomatoes, then drizzle with the creamy lime sauce before serving.
