Bring a large pot of salted water to a boil and cook tortellini according to package directions until al dente. Drain and set aside.
Season chicken strips with salt and black pepper.
In a large skillet, heat olive oil over medium-high heat. Add chicken and cook until browned and cooked through, approximately 5-7 minutes. Remove chicken from skillet and set aside.
Reduce heat to medium. Add butter to the same skillet. Once melted, add minced garlic and sun-dried tomatoes. Sauté for 1-2 minutes until fragrant.
Whisk in heavy cream and chicken broth. Bring to a gentle simmer.
Stir in Parmesan cheese and red pepper flakes. Continue simmering for 3-5 minutes until the sauce begins to thicken.
Add fresh baby spinach to the sauce and stir until wilted.
Return the cooked chicken and drained tortellini to the skillet.
Toss all ingredients together until thoroughly coated in the cream sauce. Heat for an additional 1-2 minutes until warmed through.
Serve immediately, garnished with extra Parmesan cheese if desired.
