Preparation
- Cook the potatoes in salted water until fork tender. Then, drain and let them cool completely.
- Hard boil the eggs. Once cooked, cool them down, peel, and chop or slice them.
- Thaw the frozen peas and ensure they are thoroughly drained.
- In a bowl, whisk together the mayonnaise, sour cream, Dijon mustard, apple cider vinegar, salt, and pepper to make the creamy dressing.
Assembly
- In a large clear serving bowl, layer the chopped lettuce at the bottom.
- Next, add the cooked potatoes, thawed peas, red onion, chopped or sliced eggs, and shredded cheddar cheese in distinct layers.
- Spread the creamy dressing evenly over the top of the layered ingredients.
Chilling
- Cover the bowl and refrigerate for at least one hour to allow the flavors to meld.
- Serve the salad layered for a beautiful presentation. If desired, gently toss before serving.
Notes
Make sure to let the potatoes and eggs cool completely before layering to avoid wilting the lettuce. Customization options include adding diced bell peppers, cucumbers, or carrots for extra crunch.
