Creamy Garlic Steak Bites with Parmesan Pasta

Ingredients
  

  • 1 lb sirloin steak, cut into 1-inch cubes
  • 12 oz fettuccine pasta
  • 2 tablespoons olive oil
  • 4 tablespoons unsalted butter
  • 4 cloves garlic , minced
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon sal t
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon dried oregano
  • 1/4 cup fresh parsley, chopped

Method
 

  1. Bring a large pot of salted water to a boil and cook fettuccine according to package directions until al dente.
  2. Pat steak cubes dry and season with salt, black pepper, and dried oregano.
  3. Heat olive oil in a large heavy-bottomed skillet over medium-high heat.
  4. Sear steak bites in batches for 2 to 3 minutes until a crust forms on all sides; remove steak and set aside.
  5. Reduce skillet heat to medium and add butter, scraping the bottom to release fond.
  6. Add minced garlic to the butter and sauté for 60 seconds until fragrant but not browned.
  7. Slowly whisk in heavy cream and simmer for 3 minutes until the liquid reduces and thickens slightly.
  8. Whisk in grated Parmesan cheese until fully incorporated and the sauce is smooth.
  9. Incorporate the cooked pasta and steak bites back into the skillet.
  10. Toss all components thoroughly to coat in the sauce and garnish with chopped fresh parsley before serving.
