Creamy Chicken Enchiladas

Ingredients
  

  • 2 cups cooked shredded chicken
  • 8 corn tortilla s
  • 2 cups shredded Monterey Jack cheese, divided
  • 1 cup sour cream
  • 10.5 oz condensed cream of chicken soup
  • 4 oz diced green chiles
  • 0.5 cup mil k
  • 0.5 tsp garlic powder
  • 0.25 tsp onion powder
  • 0.25 tsp black pepper

Method
 

  1. Preheat the oven to 350 degrees. Grease a 9x13 inch baking dish.
  2. Mix shredded chicken with one cup of cheese.
  3. Whisk the sour cream and soup. Add the chiles, milk, and spices.
  4. Spread 0.25 cup of sauce in the dish.
  5. Warm the tortillas until pliable. Fill with chicken. Roll and place in dish.
  6. Pour remaining sauce over the enchiladas. Sprinkle with the remaining cheese.
  7. Bake for 30 minutes. The cheese should be melted and bubbly.
