  • 8 ounces cream cheese, softened Make sure it is well softened for the best texture.
  • 1 cup mayonnaise Low-fat mayonnaise can be used.
  • 1 jar diced pimentos, drained (4 ounces)
  • 2 cups shredded sharp cheddar cheese Other types of cheese can be substituted.

Preparation
  1. In a medium mixing bowl, combine the softened cream cheese and mayonnaise.
  2. Stir with a sturdy spoon or use a hand mixer until the mixture is smooth and fully blended.
  3. Fold in the drained pimentos and shredded cheddar cheese.
  4. Mix until the pimentos are evenly distributed throughout the dip.
  5. Transfer the dip to a serving bowl or small foil pan. Cover it and chill for at least 1 hour.
  6. Before serving, stir the dip again, and serve it with crackers or fresh vegetables for dipping.

Notes

Store any leftover dip in an airtight container in the refrigerator for 3 to 4 days. Re-stir before serving. Variations can include adding different cheeses or mix-ins like cooked bacon or green onions.
