Ingredients
  

  • 6 large egg s
  • 1 large ripe avocado, pitted and peeled
  • 1 tablespoon fresh lime juice
  • 1 tablespoon fresh chives, finely minced
  • 1 tablespoon fresh cilantro, chopped
  • 0.5 teaspoon kosher salt
  • 0.25 teaspoon cracked black pepper
  • 0.25 teaspoon garlic powder

Method
 

  1. Place eggs in a saucepan and cover with cold water by 1 inch. Bring to a rolling boil, then remove from heat, cover, and let stand for 12 minutes.
  2. Transfer eggs to an ice water bath for 5 minutes. Peel and dice into 1/2-inch pieces.
  3. In a medium mixing bowl, mash the avocado with lime juice using a fork until a creamy consistency is achieved with minimal chunks.
  4. Stir the salt, pepper, garlic powder, chives, and cilantro into the avocado mash.
  5. Gently fold the diced eggs into the avocado mixture until thoroughly combined.
  6. Serve immediately to ensure optimal color and texture.
