  • 2 cups corn kernels Fresh or frozen, thawed and drained
  • 1 cup self-rising flour
  • 2 large eggs
  • 1/4 cup milk
  • Oil for frying Use enough for frying

Method
 

Preparation
  1. In a medium mixing bowl, stir together the corn, self-rising flour, eggs, and milk until a thick batter forms.
Cooking
  1. Heat oil in a large skillet over medium heat until shimmering.
  2. Drop the batter by heaping spoonfuls into the hot oil and flatten each one slightly.
  3. Fry for 2 to 3 minutes per side until golden brown and crisp.
  4. Transfer to a paper towel-lined plate to drain, then serve hot.

Notes

Corn fritters are best served warm. Pair with ranch or honey mustard. To store leftovers, let them cool and keep in an airtight container in the refrigerator for up to three days. Reheat in the oven or air fryer.
