  • 1 large ripe beefsteak tomato Choose a ripe tomato for maximum flavor and juiciness.
  • 4 slices thick slices white, sourdough, or country bread Feel free to experiment with different types of bread.
  • ¼ cup mayonnaise Can be substituted with vegan mayonnaise for a plant-based option.
  • ½ tsp kosher salt Season to taste.
  • ¼ tsp freshly ground black pepper
  • 1 tsp fresh lemon juice Optional for a brighter flavor.

Preparation
  1. Slice the tomato into thick, juicy slices, about ¼-inch thick.
  2. Season the tomato slices with salt and pepper and let them sit for about 5 minutes.
  3. Lightly toast the bread if desired, or leave it soft.
  4. Spread mayonnaise over the inside of each bread slice, adding lemon juice if you want a brighter flavor.
  5. Layer the seasoned tomato slices over two pieces of bread and spoon any tomato juices over them.
  6. Top with the remaining bread, mayo-side down, and gently press together.
  7. Slice in half and serve immediately.

Notes

Serve your classic tomato sandwich with a side of chips or a fresh salad. Best enjoyed fresh, but leftover components can be stored separately in the fridge for up to two days. Avoid assembling the sandwich until ready to eat for optimal freshness.
