Classic French Onion Meatloaf

Ingredients
  

  • 2 lbs ground beef (80/20)
  • 3 large yellow onions, thinly sliced
  • 2 tablespoons unsalted butter
  • 1/2 cup beef broth
  • 1 cup panko breadcrumbs
  • 1/2 cup shredded Gruyère cheese
  • 2 large eggs , beaten
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon kosher salt
  • 1/2 teaspoon cracked black pepper
  • 1/4 cup grated Parmesan cheese

Method
 

  1. In a large skillet, melt butter over medium-low heat and add sliced onions, cooking for 25 minutes until deep golden brown.
  2. Deglaze the skillet with beef broth and simmer until liquid is mostly evaporated; set aside to cool.
  3. Preheat oven to 375°F (190°C) and lightly grease a 9x5-inch loaf pan or line a baking sheet.
  4. In a large mixing bowl, combine ground beef, breadcrumbs, eggs, Worcestershire sauce, thyme, salt, pepper, Parmesan, and half of the caramelized onions.
  5. Gently mix by hand until just combined, avoiding overworking the meat.
  6. Shape the mixture into a loaf and place into the prepared pan or onto the baking sheet.
  7. Top the loaf with the remaining caramelized onions and sprinkle evenly with Gruyère cheese.
  8. Bake for 55 to 60 minutes or until the internal temperature reaches 160°F (71°C).
  9. Allow the meatloaf to rest for 10 minutes before slicing to ensure moisture retention.
