  • 6 large hard-boiled eggs, peeled
  • 1/3 cup mayonnaise Add more for a creamier texture.
  • 1 tablespoon Dijon or yellow mustard
  • 1/4 cup finely diced celery For added crunch.
  • 2 tablespoons sweet pickle relish, drained Can substitute with diced pickles for tang.
  • 1/4 teaspoon salt Adjust to taste.
  • 1/8 teaspoon black pepper Adjust to taste.

Method
 

Preparation
  1. Chop the hard-boiled eggs into small pieces.
  2. In a medium bowl, stir together the mayonnaise, mustard, and pickle relish.
  3. Add the chopped eggs and diced celery, and gently fold until everything is evenly coated.
  4. Season with salt and black pepper to taste.
  5. Cover the mixture and refrigerate for about 30 minutes before serving.

Notes

Serve chilled in sandwiches, wraps, or with crackers. Can add lettuce or tomato for freshness. Store in an airtight container in the refrigerator for up to 3 to 5 days.
