Classic Beef Butter Roast with Herbs

Ingredients
  

  • 3 lb beef eye of round or top sirloin roast
  • 0.5 cup unsalted butter, softened
  • 3 cloves garlic , minced
  • 1 tbsp fresh rosemary, finely chopped
  • 1 tbsp fresh thyme, finely chopped
  • 2 tsp kosher salt
  • 1 tsp black pepper, cracked
  • 1 tbsp olive oil

Method
 

  1. Preheat oven to 325 degrees Fahrenheit (165 degrees Celsius).
  2. Pat the beef roast dry with paper towels to ensure a proper sear.
  3. In a small bowl, mix softened butter, minced garlic, rosemary, thyme, salt, and pepper to form a compound butter.
  4. Heat olive oil in a large oven-proof skillet over medium-high heat.
  5. Sear the beef on all sides until a golden-brown crust forms, approximately 3 to 5 minutes per side.
  6. Remove from heat and coat the entire exterior of the roast with the prepared herb butter.
  7. Transfer the skillet to the oven and roast until the internal temperature reaches 135 degrees Fahrenheit (57 degrees Celsius) for medium-rare.
  8. Remove from the oven and transfer the roast to a cutting board.
  9. Tent the roast loosely with aluminum foil and rest for 20 minutes before carving against the grain.
