  • 3 medium very ripe bananas, mashed (about 1 1/2 cups) Use very ripe bananas for best flavor.
  • 1/2 cup unsalted butter, melted and slightly cooled
  • 3/4 cup granulated sugar
  • 1/4 cup packed light brown sugar
  • 2 large eggs, at room temperature
  • 1 teaspoon vanilla extract
  • 1 3/4 cups all-purpose flour Can substitute with gluten-free blend.
  • 1 1/2 teaspoons ground cinnamon Feel free to increase for stronger flavor.
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon fine salt
  • 2 tablespoons granulated sugar (for cinnamon swirl topping)
  • 1 teaspoon ground cinnamon (for cinnamon swirl topping)
  • 1 tablespoon melted butter (for cinnamon swirl topping)
  • Butter or nonstick spray, for greasing the loaf pan

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a 9x5-inch loaf pan.
  2. In a bowl, mash the bananas until mostly smooth.
  3. Stir the melted butter into the mashed bananas, then mix in the granulated and brown sugars until the mixture looks thick and glossy.
  4. Beat in the eggs one at a time, then add the vanilla extract.
  5. In another bowl, whisk the flour, cinnamon, baking powder, baking soda, and salt together.
  6. Fold the dry ingredients into the banana mixture until just combined.
  7. For the cinnamon topping, mix the sugar, cinnamon, and melted butter until crumbly.
  8. Layer half of the batter into the pan, sprinkle half of the cinnamon topping, then add the remaining batter and top with the rest of the topping.
  9. Use a knife to swirl the topping into the batter.
Baking
  1. Bake for 55-65 minutes until the loaf is golden and a toothpick comes out with a few moist crumbs.
  2. Cool in the pan for 15-20 minutes before serving.

Notes

Cinnamon Banana Loaf is perfect when served warm or at room temperature. You can slice it and enjoy it plain, or add a pat of butter for extra richness. It also pairs well with cream cheese spread for a delightful breakfast or afternoon snack.
