Christmas Cranberry Meatballs

Ingredients
  

  • 1 lb ground beef (80/20)
  • 1 lb ground pork
  • 1/2 cup panko breadcrumbs
  • 1 large egg , beaten
  • 1/4 cup whole milk
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1/2 tsp kosher salt
  • 1/4 tsp black pepper
  • 14 oz canned whole berry cranberry sauce
  • 12 oz chili sauce
  • 1/4 cup brown sugar
  • 2 tbsp orange juice
  • 1 tbsp soy sauce

Method
 

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine ground beef, ground pork, breadcrumbs, egg, milk, onion powder, garlic powder, salt, and pepper.
  3. Form the mixture into 1-inch balls (approximately 40 meatballs) and place them on the prepared baking sheet.
  4. Bake meatballs for 15-18 minutes or until cooked through and slightly browned.
  5. While meatballs bake, combine cranberry sauce, chili sauce, brown sugar, orange juice, and soy sauce in a large saucepan over medium heat.
  6. Whisk the sauce until smooth and bring to a gentle simmer for 5 minutes.
  7. Transfer the baked meatballs into the saucepan with the sauce.
  8. Toss meatballs to coat thoroughly and simmer on low for an additional 10 minutes before serving.
