Ingredients

Mousse Base
  • 6 oz semi-sweet or dark chocolate, finely chopped Use quality chocolate for enhanced flavor.
  • 2 tbsp strong brewed coffee or espresso
  • 1 tbsp unsalted butter
  • 2 large egg yolks Use pasteurized egg yolks if concerned about raw eggs.
  • 2 tbsp granulated sugar
  • 1 tsp vanilla extract
  • 1 cup heavy whipping cream, cold Make sure it's very cold for best volume.
  • 1 tbsp powdered sugar
  • 1 pinch salt

Method

Preparation
  1. Melt the chocolate by placing it with butter and brewed coffee in a heatproof bowl over simmering water, stirring until smooth. Let it cool slightly.
  2. In a separate bowl, whisk the egg yolks, granulated sugar, and salt until thickened and lighter in color.
  3. Gradually whisk in some warm chocolate to temper the eggs.
  4. Combine the tempered egg mixture back into the chocolate and stir in vanilla, letting it cool slightly.
  5. Whip the cold heavy cream with powdered sugar until soft peaks form.
  6. Gently fold in the whipped cream into the chocolate mixture in two additions until smooth.
Chilling
  1. Divide the mousse into small glasses, cover, and refrigerate for at least 2 hours until set.
Serving
  1. Serve the Chocolate Coffee Mousse chilled in small dessert glasses. You can add extra toppings like whipped cream, chocolate shavings, or a sprinkle of cocoa powder.

Notes

Store any leftover mousse in the refrigerator, covered to keep it fresh. Enjoy within a few days for the best texture. Consider variations with liqueur or different flavor extracts.
