- Preheat the oven to 375 degrees F and lightly grease a vintage style ceramic or glass baking dish large enough to hold the chicken in a single layer.
- Spread the sliced onions across the bottom of the dish, then nestle the chicken thighs on top.
- In a small bowl, stir the ketchup and dry onion soup mix together until fully combined. Spoon the mixture evenly over the chicken.
Cooking
- Bake uncovered for 50 to 60 minutes, or until the chicken is cooked through and the top is deeply glazed. The onions will turn soft and caramelized.
- Let the chicken rest for 5 minutes before serving. Spoon some of the onions and pan sauce over each piece.
