  • 2 cups cooked pasta
  • 1 cup cooked chicken, diced Use leftover or rotisserie chicken for convenience.
  • 1 cup cherry tomatoes, halved
  • 1/2 cup cucumber, diced
  • 1/2 cup bell pepper, diced
  • 1/4 cup red onion, diced
  • 1/4 cup olives, sliced
  • 1/4 cup feta cheese, crumbled Optional garnishing.
Dressing
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice More can be added for a zesty kick.
  • 1 teaspoon dried oregano
  • to taste Salt and pepper

Method
 

Preparation
  1. In a large bowl, combine the cooked pasta, chicken, cherry tomatoes, cucumber, bell pepper, red onion, olives, and feta cheese.
  2. In a small bowl, whisk together the olive oil, lemon juice, oregano, salt, and pepper.
  3. Pour the dressing over the salad and toss to combine.
  4. Chill in the refrigerator for at least 30 minutes before serving.

Notes

Chicken Pasta Salad can be served cold or at room temperature. Garnish with additional herbs or a sprinkle of feta cheese for extra flavor. Store leftovers in an airtight container in the refrigerator for up to 3 days. If the pasta absorbs the dressing, add more olive oil and lemon juice before serving.
