  • 3 cups cooked shredded chicken
  • 10.5 oz condensed cream of chicken soup
  • 1 cup sour cream can be low-fat
  • 0.5 cup chicken broth
  • 6 cups crumbled cornbread can substitute with bread or stuffing mix
  • 1 cup diced yellow onion
  • 1 cup diced celery
  • 4 tablespoons unsalted butter for sautéing
  • 1.5 cups chicken broth
  • 1 teaspoon poultry seasoning
  • 0.5 teaspoon dried sage
  • 0.5 teaspoon garlic powder
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Method
 

Preparation
  1. Preheat the oven to 350F and lightly grease a 9×13-inch baking dish.
  2. Melt the butter in a skillet over medium heat. Add the onion and celery, cooking for 5-7 minutes until they are soft.
  3. Stir in the poultry seasoning, sage, garlic powder, salt, and black pepper.
  4. In a large bowl, combine the crumbled cornbread with the cooked vegetables, then pour in 1 1/2 cups chicken broth. Stir gently until the cornbread is evenly moistened.
  5. In another bowl, mix the shredded chicken, cream of chicken soup, sour cream, and the remaining 1/2 cup chicken broth.
Cooking
  1. Spread the creamy chicken mixture evenly in the prepared baking dish.
  2. Spoon the cornbread dressing over the chicken, spreading it gently.
  3. Cover the dish with foil and bake for 25 minutes. Then, remove the foil and bake for another 15-20 minutes until the dressing is lightly golden and the casserole is hot and bubbling.
  4. Let it rest for 5-10 minutes before serving.

Notes

Serve hot with green salad or steamed vegetables. Can be stored in an airtight container in the refrigerator for up to 3 days, or frozen for longer storage. For extra flavor, add cooked bacon or sausage to the vegetable mixture. Adjust spices to taste.
