Cheesy Garlic Stuffed Baked Potatoes

Ingredients
  

  • 4 large Russet potatoes
  • 1 whole head of garlic
  • 1 tablespoon olive oil
  • 4 tablespoons unsalted butter, softened
  • 1/2 cup sour cream
  • 1 1/2 cups shredded sharp cheddar cheese, divided
  • 1/4 cup whole milk
  • 2 tablespoons fresh chives, finely chopped
  • 1 teaspoon kosher salt
  • 1/2 teaspoon freshly ground black pepper

Method
 

  1. Preheat oven to 400°F (200°C).
  2. Scrub potatoes and pierce several times with a fork. Cut the top off the garlic head, drizzle with olive oil, and wrap in aluminum foil.
  3. Place potatoes and foil-wrapped garlic on a baking sheet. Bake for 60 minutes or until potatoes are tender and garlic is soft.
  4. Remove from oven and let cool slightly. Slice potatoes in half lengthwise.
  5. Scoop out potato flesh into a large mixing bowl, leaving a 1/4-inch thick shell. Squeeze roasted garlic cloves from their skins into the bowl.
  6. Add butter, sour cream, 1 cup of cheddar cheese, milk, salt, and pepper to the bowl. Mash until creamy and well combined.
  7. Fold in the chopped chives.
  8. Spoon the mixture back into the potato shells, mounding it slightly.
  9. Top each potato with the remaining 1/2 cup of cheddar cheese.
  10. Bake for an additional 15 minutes until the cheese is melted and the tops are golden brown.
