  • 2 large heads cauliflower, cut into florets
  • 2 cups shredded sharp cheddar cheese, divided
  • 8 ounces cream cheese, softened
  • 1 cup sour cream
  • 4 tablespoons unsalted butter, melted
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt (or to taste)
  • 1/4 teaspoon black pepper

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C) and lightly butter a 9x13-inch baking dish.
  2. Boil the cauliflower for about 5 minutes until it begins to get tender. Drain it thoroughly and allow it to release excess moisture.
  3. In a mixing bowl, combine the cream cheese, sour cream, melted butter, garlic powder, onion powder, salt, and black pepper.
  4. Stir in 1 1/2 cups of cheddar cheese until well mixed.
  5. Gently fold in the drained cauliflower so that it is evenly coated with the mixture.
  6. Transfer the cauliflower mixture into the prepared casserole dish.
  7. Sprinkle the remaining 1/2 cup of cheddar cheese on top.
Baking
  1. Bake uncovered for 25-30 minutes until it is hot, bubbly, and lightly golden.
  2. Let it rest for 5-10 minutes before serving.

Notes

Serve as a delicious side dish or main meal. For extra flavor, consider adding cooked bacon or green onions. To achieve a crunchier topping, broil it for a few additional minutes after baking.
