Preparation
- Begin by cutting the bologna into bite-size squares or quarters. Also, cut the cheese slices into small pieces that can fit neatly over each bologna piece.
Cooking
- Heat a cast iron skillet over medium heat and add the butter. Allow it to melt and coat the bottom of the pan.
- Add the bologna pieces in a single layer to the skillet. Cook for 2 to 3 minutes on each side until they turn brown and crispy on the edges.
- Once nicely browned, reduce the heat. Place a piece of cheese on top of each bologna bite and cover the skillet for 30 to 60 seconds until the cheese is melted.
- Serve them hot right from the skillet or transfer to a platter with toothpicks for easy snacking. Enjoy!
Notes
Cheesy bologna bites are best served warm. You can serve them with your favorite dipping sauces, like mustard or barbecue sauce. For storage, let leftovers cool, place them in an airtight container, and store in the refrigerator for up to 3 days.
