Cheesy Baked Sausages with Peppers

Ingredients
  

  • 1 lb Italian sausages links (mild or spicy)
  • 2 large bell peppers, sliced into 1/2 inch strips
  • 1 large yellow onion, sliced into thin wedges
  • 2 tablespoons extra virgin olive oil
  • 3 cloves garlic , minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper
  • 1.5 cups shredded low-moisture mozzarella cheese
  • 1/4 cup grated parmesan cheese

Method
 

  1. Preheat the oven to 400°F (200°C).
  2. In a 9x13 inch baking dish, combine the sliced bell peppers, onions, and minced garlic.
  3. Drizzle olive oil over the vegetables and season with dried oregano, salt, and black pepper; toss until evenly coated.
  4. Nestle the Italian sausages into the vegetable mixture in a single layer.
  5. Bake for 25 to 30 minutes, rotating the sausages halfway through, until the vegetables are softened and sausages reach an internal temperature of 160°F (71°C).
  6. Remove the dish from the oven and distribute the shredded mozzarella and parmesan cheese evenly over the top.
  7. Return the dish to the oven for 5 minutes, or until the cheese is melted and beginning to brown.
  8. Let rest for 5 minutes before serving.
