Cheesy Baked Chicken with Bell Peppers

Ingredients
  

  • 4 boneless , skinless chicken breasts (approx 6oz each)
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 0.5 teaspoon onion powder
  • 0.5 teaspoon sal t
  • 0.25 teaspoon black pepper
  • 2 large bell peppers, sliced into strips
  • 0.5 large yellow onion, sliced into strips
  • 1 cup shredded mozzarella cheese
  • 0.5 cup shredded sharp cheddar cheese
  • 1 tablespoon fresh parsley, chopped

Method
 

  1. Preheat oven to 400°F (200°C) and grease a 9x13 inch baking dish.
  2. In a small bowl, combine garlic powder, smoked paprika, onion powder, salt, and black pepper.
  3. Rub chicken breasts with 1 tablespoon of olive oil and coat evenly with the spice mixture.
  4. Place chicken breasts in the prepared baking dish.
  5. Toss sliced bell peppers and onions with the remaining 1 tablespoon of olive oil and arrange them over and around the chicken.
  6. Bake for 20 minutes, or until chicken reaches an internal temperature of 160°F (71°C).
  7. Remove from oven and sprinkle mozzarella and cheddar cheese over the chicken and peppers.
  8. Return to oven for 5 minutes or until cheese is melted and bubbly.
  9. Garnish with fresh parsley and rest for 3 minutes before serving.
