Cheddar-Stuffed BBQ Beef Meatloaf

Ingredients
  

  • 2 lbs ground beef (80/20 lean to fat ratio)
  • 1 cup plain breadcrumbs
  • 1 large egg , lightly beaten
  • 1/2 cup yellow onion, finely minced
  • 2 cloves garlic , minced
  • 1/2 cup smoky BBQ sauce, divided
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon kosher salt
  • 1/2 teaspoon ground black pepper
  • 6 ounces sharp cheddar cheese, cut into a 1x1x5 inch block

Method
 

  1. Preheat oven to 375°F (190°C).
  2. In a large mixing bowl, combine the ground beef, breadcrumbs, egg, minced onion, garlic, 1/4 cup of the BBQ sauce, Worcestershire sauce, salt, and pepper.
  3. Mix by hand until ingredients are just incorporated, taking care not to overwork the meat.
  4. On a parchment-lined baking sheet or in a loaf pan, form half of the meat mixture into a flat rectangle.
  5. Place the block of cheddar cheese in the center of the meat base.
  6. Shape the remaining meat mixture over the cheese, pressing the edges together firmly to ensure the cheese is completely sealed inside.
  7. Bake in the preheated oven for 45 minutes.
  8. Remove the loaf from the oven and brush the top and sides evenly with the remaining 1/4 cup of BBQ sauce.
  9. Return the meatloaf to the oven and bake for an additional 15 minutes or until the internal temperature reaches 160°F (71°C).
  10. Let the meatloaf rest for 10 minutes before slicing to allow the cheese to set slightly.
