Ingredients
  

Dry Ingredients
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
Wet Ingredients
  • 1/2 cup unsalted butter, cold and cubed Ensure the butter is really cold for flaky biscuits.
  • 3/4 cup buttermilk Can substitute with low-fat milk.
Fillings
  • 1 cup shredded sharp cheddar cheese Mix of different cheeses can be used for extra flavor.
  • 1/2 cup cooked and crumbled bacon Can substitute with diced ham or skip entirely for a vegetarian version.

Method
 

Preparation
  1. Preheat your oven to 425°F (220°C) and grease a muffin tray.
  2. In a large bowl, whisk together the flour, baking powder, baking soda, salt, and black pepper.
  3. Add the cold, cubed butter to the flour mixture. Using a pastry cutter or your fingers, cut the butter into the flour until it resembles coarse crumbs.
  4. Stir in the shredded cheddar cheese and crumbled bacon until evenly distributed.
  5. Pour in the buttermilk and gently mix until the dough just comes together, being careful not to overmix.
  6. Scoop the dough into the prepared muffin tray, filling each cup about 3/4 full.
Baking
  1. Bake in the preheated oven for 15-18 minutes, or until the biscuits are golden brown on top.
  2. Allow the biscuits to cool in the tray for a few minutes, then transfer them to a wire rack to cool slightly before serving.

Notes

These biscuits are best served warm. Enjoy them plain or with butter and honey. Store in an airtight container at room temperature for up to 3 days, or freeze tightly for longer storage. Consider adding herbs or spices for customization.
