  • 3 large eggs
  • 1 cup granulated sugar

  • 1 teaspoon vanilla extract

For the Frosting
  • 8 oz cream cheese, softened Ensure room temperature for easy mixing.
  • 1/4 cup butter, softened Ensure room temperature for easy mixing.
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C). Line a 15×10 inch jelly roll pan with parchment paper and grease it lightly.
  2. In a bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  3. In another bowl, beat the eggs and granulated sugar until thick and pale. Stir in the grated carrots and vanilla.
  4. Gradually fold in the dry ingredients until just combined.
  5. Pour the batter into the prepared pan and spread it evenly.
  6. Bake for 13-15 minutes until a toothpick comes out clean.
  7. Remove from the oven and immediately sprinkle the top with powdered sugar, then invert onto a kitchen towel.
  8. Roll the cake and towel together, starting at a short end, and let cool.
Frosting
  1. For the frosting, beat the cream cheese and butter together until smooth.
  2. Gradually mix in the powdered sugar and vanilla until creamy.
Assembly
  1. Unroll the cooled cake and spread the cream cheese frosting evenly.
  2. Roll the cake again without the towel, wrap in plastic, and refrigerate for at least 1 hour before serving.

Notes

Store wrapped in plastic in the refrigerator for up to 5 days. Can be frozen for 2-3 months. For variations, you can add nuts, raisins, or pineapple for extra flavor.
