Cajun Chicken with Sautéed Peppers & Creamy Mashed Potatoes

Ingredients
  

  • 2 lbs Yukon Gold potatoes, peeled and cubed
  • 4 boneless skinless chicken breasts (approx. 6 oz each)
  • 2 tbsp Cajun seasoning
  • 2 tbsp olive oil
  • 1 red bell pepper, sliced into strips
  • 1 green bell pepper, sliced into strips
  • 1 yellow onion , sliced into strips
  • 4 tbsp unsalted butter
  • 1/2 cup heavy cream
  • Salt and black pepper to taste
  • Fresh parsley , chopped for garnish

Method
 

  1. Place potatoes in a large pot of salted water, bring to a boil, and simmer for 15 to 20 minutes until tender.
  2. Coat chicken breasts evenly on both sides with the Cajun seasoning.
  3. Heat olive oil in a large skillet over medium-high heat.
  4. Sear the chicken for 6 to 8 minutes per side until the internal temperature reaches 165°F (74°C), then remove from the pan and let rest.
  5. In the same skillet, add the bell peppers and onions; sauté for 5 to 7 minutes until softened and slightly charred.
  6. Drain the potatoes and mash with butter and heavy cream until smooth; season with salt and pepper to taste.
  7. Slice the chicken and serve alongside the mashed potatoes, topping the chicken with the sautéed pepper and onion mixture.
