Billy Goats Cookies

Ingredients
  

For the Dough
  • 1/2 cup unsalted butter, room temperature Make sure your butter is at room temperature for easier mixing.
  • 1 cup granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1/3 cup sour cream Can be substituted with plain yogurt.
  • 2 cups all-purpose flour You can use whole wheat flour or oats for a healthier version.
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon salt
  • 2 teaspoons ground cinnamon
  • 1 teaspoon ground allspice
  • 1 teaspoon ground cloves
  • 2 cups pitted dates, chopped Chop dates into small pieces for even distribution.
  • 2 cups walnuts, chopped Chop walnuts into small pieces for even distribution.
  • 1 1/2 cups chocolate chips (optional) Fold in chocolate chips if using.

Method
 

Preparation
  1. Preheat the oven to 350°F and line two baking sheets with parchment paper.
  2. In a mixing bowl, beat the butter and granulated sugar until smooth and creamy.
  3. Add the eggs one at a time, mixing well after each addition.
  4. Stir in the vanilla extract and sour cream until combined.
  5. In a separate bowl, combine the flour, baking powder, baking soda, salt, cinnamon, allspice, and cloves.
  6. Gradually add the dry mixture to the wet ingredients, mixing just until everything is incorporated.
  7. Gently fold in the chopped dates, walnuts, and chocolate chips if you're using them.
  8. Scoop the dough into about 2-tablespoon portions and place them onto the prepared baking sheets.
Baking
  1. Bake one sheet at a time for 10-12 minutes, or until the cookies are set and the edges are lightly golden.
  2. Transfer the cookies to a wire rack to cool completely.

Notes

Billy Goats can be enjoyed on their own or served with a glass of milk or a cup of tea. They also make a lovely addition to cookie platters for gatherings or parties. Feel free to sprinkle a little extra cinnamon on top before serving for a special touch. To keep your Billy Goats fresh, store them in an airtight container at room temperature for about a week or freeze them for up to 3 months.
