Ingredients

Main Ingredients
  • 1 lb ground beef Use lean ground beef for a healthier option.
  • 4 medium russet potatoes, thinly sliced
  • 2 medium carrots, sliced
  • 1 medium yellow onion, thinly sliced
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1 teaspoon salt Adjust to taste.
  • ½ teaspoon black pepper Adjust to taste.
  • ½ teaspoon dried thyme
  • 4 tablespoons butter
  • ½ cup shredded cheddar cheese (optional) Add before serving if desired.
  • ¼ cup water or beef broth

Method

Preparation
  1. Preheat the oven to 425 degrees F (220 degrees C).
  2. Tear off four large sheets of heavy-duty aluminum foil.
  3. In a large bowl, combine the sliced potatoes, carrots, and onion.
  4. Add the olive oil, garlic powder, onion powder, paprika, salt, pepper, and thyme. Toss until everything is evenly coated.
  5. Divide the ground beef into four portions and gently shape each portion into a small patty. Season both sides with additional salt and pepper if desired.
Assembly
  1. Place an even portion of the seasoned vegetables in the center of each foil sheet.
  2. Place a beef patty on top and add 1 tablespoon of butter to each packet.
  3. Pour about 1 tablespoon of water or beef broth into each packet.
  4. Fold the foil tightly over the ingredients and crimp the edges to create sealed packets, leaving a little room inside for steam to circulate.
Cooking
  1. Place the packets on a baking sheet and bake for 35 to 45 minutes, or until the potatoes and carrots are tender and the beef reaches an internal temperature of 160 degrees F (71 degrees C).
  2. Carefully open each packet, sprinkle with shredded cheddar cheese if using, and return to the oven uncovered for 2 to 3 minutes until the cheese melts.
  3. Let the packets rest for a few minutes before serving. Open carefully, as the steam will be very hot.

Notes

Beef and Vegetable Foil Packets can be served directly from the foil for a fun and rustic presentation. If you have leftovers, store them in an airtight container in the refrigerator for up to three days. You can reheat them in the oven or in the microwave, but make sure to cover them to keep them moist.
