Preparation
- Preheat the oven to 375 degrees F (190 degrees C) and lightly grease a 9×13 inch baking dish.
- Melt the butter in a large skillet over medium heat, then add the sliced kielbasa and onion. Cook for 5 to 7 minutes until the kielbasa is browned and the onion has softened.
- In a bowl, whisk together sour cream, chicken broth, garlic powder, smoked paprika, salt, and black pepper until smooth.
- Arrange the thawed pierogi in the baking dish. Scatter the kielbasa and onions on top, then pour the sour cream mixture over everything.
- Sprinkle shredded cheddar evenly over the casserole. Cover loosely with foil and bake for 20 minutes.
- Remove the foil and continue baking for another 15 to 20 minutes until the cheese is melted and bubbly.
- Let the casserole rest for 5 minutes before serving. Sprinkle with fresh parsley and serve warm.
Notes
Serve warm, garnished with fresh parsley. Pairs well with a side salad or steamed vegetables. You can also serve it with a dollop of sour cream on the side. Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the oven or microwave.
