Preparation
- Preheat the oven to 400°F (200°C). Lightly grease a large baking dish.
- Toss the halved potatoes with olive oil, garlic powder, smoked paprika, salt, and black pepper. Spread them evenly in the baking dish.
- In a separate bowl, season the chicken wings or drumettes with olive oil, paprika, garlic powder, onion powder, Italian seasoning, salt, and black pepper. Arrange the seasoned chicken over the potatoes.
- In another bowl, whisk together the honey, soy sauce, minced garlic, melted butter, Dijon mustard, and apple cider vinegar. Pour about two-thirds of this sauce over the chicken and potatoes.
Cooking
- Bake everything in the oven for 40–45 minutes, turning the chicken halfway through cooking.
- While it bakes, mix the cornstarch with water and stir it into the remaining sauce. Simmer this mixture for 1–2 minutes until it thickens.
- Remove the baking dish from the oven. Sprinkle the shredded mozzarella cheese over the potatoes, and drizzle with the thickened honey garlic sauce.
- Return the dish to the oven for 5–8 minutes, until the cheese is melted and bubbly.
- Garnish with fresh parsley and serve immediately.
Notes
For extra crispy chicken, broil it for a few minutes at the end of cooking. Feel free to add other veggies, like carrots or Brussels sprouts, to the baking dish for a complete meal. Adjust the sweetness of the sauce by adding more or less honey to match your taste.
