Ingredients

Potatoes
  • 3 large Russet potatoes
Seasoning and Oil
  • 3 tablespoons olive oil
  • 3/4 cup finely grated Parmesan cheese
  • 3 cloves garlic, finely minced
  • 1 teaspoon garlic powder
  • 3/4 teaspoon salt
  • 1/4 teaspoon black pepper

Method

Preparation
  1. Preheat the oven to 425°F (220°C) with a large rimmed baking sheet inside.
  2. Cut the potatoes into evenly sized fries about 1/4-inch thick.
  3. Soak the potatoes in cold water for 20-30 minutes.
  4. Drain and dry the potatoes thoroughly.
Cooking
  1. Toss the potatoes with olive oil, garlic powder, salt, and black pepper.
  2. Spread the fries in a single layer on the hot baking sheet.
  3. Bake for 20 minutes, turn, then bake for another 15-20 minutes until crisp and golden.
  4. Add the minced garlic and Parmesan during the final few minutes of baking.
  5. Serve immediately while hot and crisp.

Notes

Make sure to soak the potatoes to improve crispiness. Don’t overcrowd the baking sheet for even baking. For extra flavor, experiment with herbs or spices in the oil.
