Baked Cheesy Beef Rigatoni

Ingredients
  

  • 1 lb rigatoni pasta
  • 1 lb lean ground beef
  • 1 small yellow onion, diced
  • 3 cloves garlic , minced
  • 24 oz marinara sauce
  • 1 teaspoon dried oregano
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon ground black pepper
  • 2 cups shredded mozzarella cheese
  • 1/2 cup grated parmesan cheese
  • 1 tablespoon fresh parsley, chopped

Method
 

  1. Preheat oven to 375°F (190°C) and grease a 9x13 inch baking dish.
  2. Cook rigatoni in a large pot of salted boiling water until 2 minutes short of al dente; drain and set aside.
  3. In a large skillet over medium-high heat, sauté the ground beef and diced onion until meat is browned and onion is translucent. Drain excess fat.
  4. Add minced garlic, oregano, salt, and pepper to the skillet; cook for 1 minute until fragrant.
  5. Pour marinara sauce into the meat mixture and simmer on low heat for 10 minutes.
  6. Toss the par-cooked rigatoni with the meat sauce until evenly coated.
  7. Layer half of the pasta mixture into the prepared baking dish and sprinkle with 1 cup of mozzarella cheese.
  8. Top with the remaining pasta mixture, followed by the remaining mozzarella and the grated parmesan cheese.
  9. Bake for 20-25 minutes until the cheese is melted, bubbling, and slightly golden.
  10. Remove from oven and garnish with fresh parsley before serving.
