Ingredients
  

Main Ingredients
  • 4 cups frozen green peas Thaw and drain well before use.
  • 6 slices bacon Cook until browned and crisp.
  • 1 cup sharp cheddar cheese, cut into small cubes You can substitute with feta or mozzarella if desired.
  • 1/3 cup finely diced red onion
Dressing
  • 3/4 cup mayonnaise
  • 1/2 cup sour cream Can substitute with Greek yogurt for a lighter version.
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon granulated sugar
  • 1/2 teaspoon salt Adjust seasoning to taste.
  • 1/4 teaspoon black pepper

Method
 

Preparation
  1. Cook the bacon in a skillet over medium heat until it’s browned and crisp. Transfer it to a paper towel-lined plate to drain. Once it’s cool enough to handle, crumble or chop it into small pieces.
  2. Thaw the frozen peas completely and drain them well. If the peas seem particularly wet, spread them briefly on a clean kitchen towel or paper towels.
Making the Dressing
  1. In a small bowl, whisk together the mayonnaise, sour cream, apple cider vinegar, sugar, salt, and black pepper until smooth and creamy. Taste and adjust the seasoning if necessary.
Assembling the Salad
  1. In a large bowl, combine the peas, diced cheddar, red onion, and most of the crumbled bacon.
  2. Pour the dressing over the salad and gently fold until everything is evenly coated.
Chill and Serve
  1. Cover the bowl and refrigerate the salad for at least 1 hour before serving. Before serving, stir gently and scatter the remaining bacon over the top.

Notes

Serve chilled as a side dish. Pairs well with grilled meats, sandwiches, or can be enjoyed on its own. Storage: Keep leftovers in an airtight container in the refrigerator for 3-5 days.
